Yum, yum! I'm so glad that I came across this delicious Cran-Blueberry Cake! A few months ago a friend of mine gave me a Company's Coming Cooking at Home cook book and I'm so glad she did. I have tried only a few recipes so far and they've all turned out delicious!
Butter (or hard margarine), softenend 1 cup
Granulated sugar 1 1/2 cups
Salt 1/2 tsp.
Vanilla 2 tsp.
Egg Yolks (large) 4
All-purpose flour 3 cups
Baking powder 2 tsp.
Milk 2/3 cup
Egg Whites (large) 4
Granulated Sugar 1/2 cup
Fresh (or frozen) blueberries 3 cups
Fresh (or frozen) cranberries,
coarsely chopped 2 cups
All-purpose flour 1 tbsp.
Granulated sugar 2 tsp.
Beat first 4 ingredients in large bowl until light and creamy. Add egg yolks. Beat until well combined.
Sift first amount of flour and baking powder in medium bowl. Add to butter mixture in 2 additions, alternating with milk.
Beat egg whites in medium bowl until soft peaks form. Fold in second amount of sugar. Fold in batter.
Toss blueberries and cranberries in second amount of flour in large bowl. Stir into batter. Pour into greased 9 x 13 inch ( 22 x 33 cm) pan.
Sprinkle with last amount of sugar. Bake in 350*F (175*C) oven for about 1 hour until wooden pick inserted in centre comes out clean. Cut into 18 pieces.
