Apple Crumb Spice muffins



Mmmmmm.... nothing smells better then something freshly baked. Right now a fresh batch of Apple Crumb Spice Muffins came out of my oven. I made them mini. I find that mini muffins are the best for kids. That way they won't just start them, eat the top and then say they're full. That's what happens here all the time. Then I end up with a dozen muffins with no tops!:S


For those of you that like to bake, here is the recipie.

Apple Crumb Spice Muffins

Prep time: 15 minutes
Baking time: 18 - 22 minutes (for regular size) and 13-15 minutes for the mini
Makes 12 regular size muffins and approx 32 mini muffins

Spice Crumb
2 tbsp. packed brown sugar
5 tsp. all purpose flour
1/4 tsp. each cinnamon and nutmeg
2 tsp. vegetable oil

Batter
2 cups all-purpose flour
1/2 cup granulated sugar
1 tbsp. baking powder
1 tsp. cinnamon
1/2 tsp each salt, baking soda and ground ginger (* I didn't have ground ginger so I used pumpkin spice.)
2 medium Ontario Apples ( I used granny smith)
2 eggs
1 cup plain yogurt
1/3 cup vegetable oil

1. Lightly greast 12 muffin cups or spray with nonstick cooking spray; set aside.
2.SPICE CRUMB: In a small bowl, stir together brown sugar, flour, cinnamon and nutmet; stir in oil until mixed. Set aside.
3.BATTER: In medium bowl and using fork, stir together four, sugar, baking powder, cinnamon, salt, baking soda and finer until well mixed. Core apples and peel; chop into pieces no larger than 1/2 inch (1cm).
4. In large bowl, whisk together eggs, yogurt and oil until blended; stir in flour mixture just until combined. Fold in apples until evenly distributed. Spoon into prepared muffin cups. Sprinkle with spice crumb. Bake in 375 degrees. oven until deep golden brown and toothpick inserted in centre comes out clean, 18 - 22 minutes.
5. Let stand for 5 minutes before removing from pan. Serve warm or let cool completely on rack.
